•Extract – 1 liter (12 oranges and 6 to 8 lemons)
•Sugar – 1 kg
•Colour – orange
How to prepare
Wash all orange and lemon thoroughly. Cut the orange into 2 without taking its skin off and put it in a vessel. Remove the skin of lemon and cut it into round slices. Now put the segments of oranges along with the round sliced lemon into another large vessel and pour some water into it till the segments and slices are drowned out completely. Put this vessel on the gas and allow it to warm for a while.
The white layer inside the skin of the orange is to be removed and thrown; the remaining is to be cut into strips. Thus strips are taken in another vessel and water is added till the strips are drowned. When water boils properly filter it and put this strips in the same vessel and put water till they get drowned completely. Reject the boiled water.
Add little colour to it when water boils properly filter again. Again put new water till the strips are drowned and boil it. Reject the old water and make a potli of the strip. Take the pectin test of orange segments and lemons. Filter it when pectin test is over and the filtered syrup is now put on gas. Add sugar and keep stirring after one or two boil to filter the extract. This filtered syrup is again put on the gas. Put the potli (bundle) in the syrup.
After that take the sheet test and put the vessel down from the fire and remove the white layer. Open the potli (bundle) and spread the strips in the syrup for the marmalade to set. Put it in sterilized bottles and finally cover it when it becomes cold. Note that the strips should be made only of orange and not of lemon.
