How to prepare Kerala aviyal?


Aviyal is a mixture of vegetables along with coconut and curd. It is tasty and healthy dish. Do you want to know the steps to prepare Kerala aviyal? Here I have given some steps to prepare Kerala aviyal. Aviyal is one of the famous traditional dishes in Kerala.

Aviyal is very easy to prepare and simple ingredients are needed to prepare this dish. Most of the people including the children and aged people in Kerala like this dish very much. It consists of mixture of vegetables so it is very healthy. It taste so nice and it takes few minutes to prepare. It can be served along with dhal curry and pappadam. Read the following steps to prepare tasty Kerala aviyal. It is the main dish of Kerala people and they prepare it during onam and vishu and Christmas.

Ingredients required for aviyal


1. Drum sticks: 1 (in number)
2. Carrots: 3-4 (medium size)
3. Potato: 3
4. Cucumber: 2
5. Raw plantain: 2
6. Green Beans: 5
7. Pumpkin: ½ (both white and yellow)
8. Green chilly: 3
9. Dry red chilly: 3
10. Grated coconut: 1 cup
11. Raw mango: ½ cup
12. Salt: some pinch(as required)
13. Turmeric powder: 1 tsp
14. Cumin seeds: 1 tsp
15. Oil: 2 tsp
16. Curry leaves: a small bunch
17. Curd: ½ cup
18. Water: as required
19. Mustard seeds: 1 tsp

Steps to prepare aviyal


Step 1: Clean all vegetables with water and chop all vegetables into medium slices.

Step 2: Keep the plantain, pumpkin, potato in salt and little turmeric powder for a few minutes to avoid sticking of vegetables.

Step 3: Start cooking the cleaned vegetables with some pinch of salt.

Step 4: Grind the grated coconut, cumin seeds, green chilly with some water to a fine paste.

Step 5: Put some turmeric powder, required salt and water into the vegetables and stir it well.

Step 6: Add the coconut paste and once again stir it well.

Step 7: Add the curd into the vegetable mix when all vegetables are well cooked and stir it well.

Step 8: Finally roast the mustard seeds, curry leaves, dry red chilly in oil and pour it into the vegetable mix.

Step 9: Close the lid for few minutes to avoid loss of fragrance. Serve it with rice, dhal curry and pappadam.
