How to prepare Kerala prawn roast?

Ingredients required for Kerala prawn roast


1. Prawns: 250 g
2. Onion : 1 (chopped)
3. Tomato: 3(chopped)
4. Green chilly: 2 (sliced)
5. Ginger: 1 (medium size)
6. Garlic: 5-6 (pieces)
7. Turmeric powder: ¼ tsp
8. Coriander powder: 1tsp
9. Red chilly powder: 1 tsp
10. Pepper powder: 1 tsp
11. Cumin powder: ½ tsp
12. Coconut oil: as required
13. Coconut milk: 1 cup
14. Grated coconut: ½ cup
15. Curry leaves: 10 leaves
16. Salt: a pinch
17. Tarmarind (kudam puli)-2 pieces
18. Water: (as required)

Preparation method of Kerala prawn roast


Step 1: Clean the prawns well with water.

Step 2: Grind ginger and garlic with little water to form a fine paste.

Step 3: Prepare coconut mix by marinating the grated coconut pieces with little salt, pepper powder, coriander powder and oil. Fry the above coconut mix for 2 minutes and keep it aside.

Step 4: Heat oil in a pan. Add ginger garlic paste, green chilly and stir it well. Add chopped onion and stir it well till the onion become golden brown.

Step 5: Add chopped tomato and cook well. Add red chilly power, coconut milk, and turmeric powder and stir it well.

Step 6: When the coconut milk boils add prawns and stir well. Add tamarind, coconut mix, salt and some water and stir it well.

Step 7: Pour some coconut oil after the coconut milk gets drained. Keep the prawns in sim fire for 3 minutes.

Step 8: Garnish it with curry leaves or coriander leaves for better aroma. Serve it with rice, appam.

Extra tip: Deep fry the coconut mix to attain better taste.
