Ingredients required for Kerala chilli chicken


1. Chicken: 500 g
2. Ginger: 2 (medium size)
3. Garlic: 20 (pieces)
4. Egg: 2
5. Corn flour: ¼ cup
6. Salt: as required
7. Red chilly powder: as required
8. Water: as required
9. Oil: (for frying)
10. Pepper powder: 1 tsp
11. Onion: 1 (sliced)
12. Capsicum: ½ cup (chopped)
13. Curry leaves: 10

Preparation method for Kerala chilli chicken


Step 1: Clean the chicken with water and remove the unwanted skin because those skins consist of fat which increases cholesterol.

Step 2: Grind ginger and garlic with little water to form a fine paste.

Step 3: Mix the chicken with ginger garlic paste, egg, corn flour, salt,
red chilly powder, pepper powder with little water and keep it closed for 10 minutes.

Step 4: Heat oil in a pan. Deep fry the marinated chicken in oil till it turn into red colour.

Step 5: Garnish the chilli chicken with onion, curry leaves and capsicum. Serve this chilli chicken with rice.

Extra tip: The softness of chilli chicken depends on how much time you soak the chicken mix. While marinating the chicken small holes can be made on the flesh for deep insertion of masala. It also makes the chicken to cook faster.
