How to prepare Kerala egg briyani?

In Kerala, most of the non-vegetarian dishes include chicken, meat, beef, prawn, and fish. There are only few dishes are prepared with egg. For a change we can try Kerala egg briyani in our home. The egg briyani is prepared by pouring the egg yolks, so some people think briyani has raw taste of egg. But it is not true, this egg briyani has good aroma when we mix the egg with other masala. Read the following steps to prepare egg briyani in your home.

Ingredients required for Kerala egg briyani


1. Basmati rice: ½ kg
2. Water: 4 cups
3. Eggs: 6 (in numbers)
4. Onion: 1 (sliced)
5. Ginger paste: 1 tsp
6. Garlic paste: 1 tsp
7. Green chilli: 2 (sliced)
8. Cloves: 3
9. Black pepper powder: 2 tsp
10. Bay leaves: 3
11. Cardamom: 3
12. Red chilli powder: 2 tsp
13. Coriander powder: 1 tsp
14. Garam Masala: 1 tsp
15. Cinnamon sticks: 4 (thin)
16. Cumin seeds: 1 tsp
17. Oil: 5 tsp
18. Coriander leaves: few
19. Salt: as required

Steps to prepare Kerala egg briyani


Step 1: Boil 3 eggs in a pan, peel it, cut each of them into two halves and keep aside.

Step 2: Beat the remaining 3 eggs in bowl and add a pinch of salt in it.

Step 3: Heat oil in a pan and pour the beaten egg mix into it. Stir well till it becomes golden brown and keep it aside.

Step 4: Clean the basmati rice, soak in water, drain well and keep aside.

Step 5: Heat oil in a pan, add cumin seeds, salt, cardamom, cinnamon sticks, cloves, black pepper powder, garam masala, bay leaves, coriander powder and fry for a minute.

Step 6: Add the sliced onions, chopped green chilly, ginger garlic paste and fry till the onion turns into brown.

Step 7: Add the red chilli powder and stir it well. Keep this mix aside.

Step 8: Boil the rice in a pressure cooker. Put the sliced eggs and beaten egg mixture and stir it well. Close the lid for 10 minutes.

Step 9: Garnish it with coriander leaves and serve it hot.
