The Vattayappam /Streamed Rice cake commonly served as a snack or breakfast. The Main Ingredients of the dish are rice flour and coconut milk. It is one of the traditional healthy foods of Kerala's cuisine. Vattayappam is specially prepared during Easter and Christmas days. Vattayappam is more familiar among Malaya lees and likely doing their best in Appam. Mostly Kerala cuisines are comes with coconut Milk which is god for health. Let us see the Ingredients in detail

Ingredients of Vattayappam


• Fine Rice Flour-4 Cups
• Warm Water-1/2 Cups
• Water – 2 Cups
• Coconut Milk-1 ½ Cups
• Yeast-1/2 Teaspoon
• Sugar-3/4 Cups
• Cardamom-5 No's
• Garlic-1 Clove
• Ghee-2 Tea Spoon
• Cashew Nut-15 No's
• Raisins-20 No's
• Cherry-10 No's
• Salt- For Taste

Method to prepare Vattayappam recipe


STEP 1:
Dissolve Yeast in ½ cup of warm water (make sure water should not be too hot) along with ½ table spoon of sugar and let it for 30 minutes until it becomes frothy.

STEP 2:
Crush Cardamom and Garlic separately and keep aside.

STEP 3:
Mix two table spoon of rice flour with 2 Cups of water and boil it for 5 Minutes by stirring it.Keep aside and leave it cool.

STEP 4:
Add this to the remaining rice flour along with yeast dissolved water, coconut milk, cardamom, garlic and salt. Mix it well in a mixer grinder. The Batter should be thick in consistency is must.

STEP 5:
Keep it overnight which means 8 hours in a warm place for fermentation.

STEP 6:
Spread evenly ghee in a flat pan or an idly mould and pour the batter into it fill up to half pan.

STEP 7:
Garnish it with cashew nut, raisins and cherry if available.

STEP 8:
Stream it like idly for 20 minutes in a medium heat. Close the lid only after the water starts boiling.

STEP 9:
When it is done remove from the flame and keep it cool. Cut the Vattayappam as your convenience into shapes and serve in another plate and the taste of Vattayappam will be more delicious try and surely you will experience the taste of Vattayappam.

Tips to Get Good Results
• As the batter quantity increases during fermentation use a vessel can hold almost double the quantity.
• Fine Rice Flour is Mandatory for Vattayappam.
