Sweet Nellikka (Gooseberry) Pickle

1 kg Nellikka (gooseberry)
2 tsp chemical lime
1 1/2 kg sugar
6 cups water
1 tbsp lemon juice


Prick Nellikais(gooseberry) well with a fork, all over.

Dissolve 1 tsp lime in enough water to cover nellikka (gooseberry) and soak overnight.

Remove and wash well. Repeat once more.

Drain and wash thoroughly, squeezing and rinsing again so no trace of the lime remains. Take enough water to soak nellikka comfortably, boil the water and add Nellikais (gooseberry). Cook till tender and transparent, drain and keep aside.

Make sugar syrup with sugar and 6 cups water, till one thread consistency. Remove the dirt/scum that may keep coming.

Add the cooked Nellikais (gooseberry), bring to a boil and simmer 4-5 minutes.

Store in a clean airtight jar. If you want you may add elachi to flavor while still hot.
