Ingredients for Kerala style egg curry



Hard boiled eggs – 4
Onion -2 medium
Tomato -2
Potato -1
Green chili -2
Ginger – 1 piece
Garlic -3 pods
Shallot -3
Coconut -1/2
Chili powder – 1 tablespoon
Turmeric powder – 1/2 teaspoon
Coriander powder– 2 tablespoon
Garam Masala – 1/2 teaspoon
Oil
Salt
Curry leaf

How to make Kerala style egg curry



1. Boil the eggs
2. Heat oil in a pan or a kadai.
3. Add onion, ginger, garlic and green chili. Fry till onion turns light brown.
4. Add Chili powder, Turmeric powder, coriander powder and salt to taste.
5. Then add tomato and potato and fry again.
6. Add ½ cup water .cover and cook for 10 min.
7. Add boiled eggs.
8. Add curry leaf and garam masala.
9. Grind the coconut and add to this.
10. Splutter the mustard and fry shallot and add it into the curry
