Onam Special Aravana Payasam Recipe - Ingredients, preparation guide, health benefits

Ingredients of Aravana Payasam

The main ingredients needed for the preparation of Aravana Payasam are listed here. They are raw rice, jaggery (sweet jaggery), ghee, cardamom powder, kismis, cashew nuts and coconut.

Method of Preparation on Aravana Payasam

Rinse the raw rice with fresh cold water and allow it to dry for an hour under sun. Heat the pan in flame and add an amount of Ghee into the pan. Fry the dried rice in ghee until it get brownish. Smash the jaggery and add it to the fried raw rice. Add an amount of ghee again into the mixture. Jaggery melts in a heat then add kismis, cashew nuts and cardamom powder allow into mix well into the rice mixture under slow flame. Remove the pan from heat in the sticky condition. Rice is to be breaked and water is to be added under drowning. 2:3 proportion of jaggery and rice to be added for the taste. Ghee is to be added as per the taste needed. Alternatively Vanaspathi is also to be added instead of ghee.
