How to prepare chicken mappas?

The Chicken mappas is very tasty recipe which is especially famous in Kerala. The best companion for chicken mappas is appam. In Kerala, most of the people prepare this chicken mappas during Ester and Christmas. It can also be served along with chappathi, rice, etc. It is very easy to prepare and it takes very less time for preparation. It requires very less ingredients.

Ingredients required to prepare chicken mappas


1. Chicken: 1kg
2. Potato: 3-4 (in numbers)
3. Onion : 2 (large size and fully chopped)
4. Green Chilly: 2-3 (sliced into two pieces)
5. Ginger : 1( make slices)
6. Garlic : 10-20(pieces)
7. Curry leaves (as required)
8. Salt : a pinch (as required)
9. Coriander seeds : 1 tsp(tea spoon)
10. Cloves : 2-3
11. Cinnamon stick : ½
12. Cardamom seeds : 1 tsp
13. Grated coconut : ½ cup
14. Turmeric powder : ½ tsp
15. Garam masala : 1-2 tsp
16. Black pepper powder : 2-3 tsp
17. Oil (as required)
18. Water(as required)

Steps to prepare chicken mappas


Step 1: Wash the chicken neatly and remove the unwanted skin. Marinate the chicken well with garam masala, turmeric powder, salt, Black pepper powder.

Step 2: Grind cloves, grated coconut, cardamom seeds, cinnamon stick, and coriander seeds, with water. Keep the paste separately.

Step 3: Boil the potato partially with little salt and turmeric powder and remove the skin and cut it into fine pieces.

Step 4: Heat oil in a pan. Put the chopped onion, green chilli, sliced ginger, garlic, salt and fry well.

Step 5: When the onion changes into brown then add sliced potato, marinated chicken, and then leave it in thin fire.

Step 6: After 10 minutes pour the grinded paste and stir it well. Pour enough water for cooking chicken. Leave it for 5 minutes so that the raw smell of chicken changes to fragrance. Finally garnish it with curry leaves.

Extra tip: Leave the chicken for 10 – 20 minutes so that the chicken cook well and it be so soft for a long time.
