How to prepare Kerala chicken manjurian?

Ingredients required for Kerala chicken manjurian


For marination
1. Chicken: 500 g(bone less)
2. Ginger: 1(fine piece)
3. Garlic: 10-12(pieces)
4. Red chilly powder: ½ tsp
5. Pepper powder: ¼ tsp
6. Egg white: 1(beaten)
7. Corn flour: 2 tsp
8. Soya sauce: 1½ tsp
9. Salt: as required
10. Turmeric powder: ½ tsp

For sauce
1. Onion: 2(chopped)
2. Green chilli: 3(chopped)
3. Capsicum: 1(chopped)
4. Ginger & garlic: 1 tsp (each chopped)
5. Red chilly powder: 1 tsp
6. Water: 1 cup
7. Soya sauce: 2 tsp
8. Tomato sauce: 1 tsp
9. Chilly sauce: 2 tsp
10. Olive oil: as required
11. Water: as required
12. Salt: as required

Steps to prepare Kerala chicken manjurian


Step 1: Clean the chicken with water and little turmeric powder

Step 2: Grind ginger and garlic into a fine paste. Mix this paste with chilly powder, pepper powder, egg white, corn flour, soya sauce and salt and marinate the chicken with this paste. Keep this marinated chicken mix aside for more than one hour.

Step 3: Heat oil in a pan. Deep fry the chicken pieces in hot oil until it turn into golden brown. Keep the fried chicken aside.

Step 4: Heat oil in a pan. Add chopped onion, ginger garlic paste, green chili, capsicum, red chili powder, and little turmeric powder, salt, water and stir it well.

Step 5: Add soya sauce, chilly sauce and tomato sauce and stir it well. After 5 minutes add the fried chicken pieces into sauce and close the lid. Remove the pan after 10 minutes and garnish it with some coriander leaves.

Extra tip: Refrigerating the marinated chicken keeps the softness of the chicken for a long time.
