Kerala Style Chakkakuru Dishes

Quick and easy traditional dishes from Jack fruit seed/Chakkakuru,are popular among Keralites. So here goes some recipes..

Jack fruit is commonly found in south Asia. Jack fruit is a delicious fruit and when fully ripe, it has strong sweet odor. It is a complete package in terms of utility. It has vast medicinal uses and health benefits. Jack fruit contains vitamin A, vitamin C, thiamin, riboflavin, niacin, calcium, potassium, iron and manganese. Nutrients in Jack fruit have powerful anti cancer,anti aging and anti- ulcerative properties and it is good for pregnant woman also. It is hard to digest. Jack fruit raw flesh/Chakka chula and Jack fruit seed/chakkakuru are the edible parts of jack fruit. Koozha and varika chakka are the two main types of Jack fruit.

Different variety of dishes are made with Jack fruit.The main dishes are Spicy Jack fruit Curry,Jack fruit pickle,Jack fruit Varatti, Jack fruit plum cake, Jack fruit halwa, Jack fruit toffees,chips,appam and avial. These dishes can be included in all the three meals in a day. Jack fruits usually ripen from late spring to late summer in Asia. The outer covering of the fruit is given to cattle.Jack fruit wood is used for making furniture. Jack fruits are getting extinct in south Asia because of increasing demand in the market for wood. Dishes made from the jack fruit seeds are amazingly tasty but it is the hardest part in Jack fruit.

1)Ingredients for making Chakkakuru Prawn Thoran


  • Chakkakuru -500 gm

  • Prawn-250 gm

  • Coconut paste -1 cup

  • Green chilly-2

  • Small onion-50 gm

  • Turmeric powder-half teaspoon

  • salt -to taste

  • Water-half cup


Tempering
  • Coconut oil - 2 teaspoon

  • Curry leaves - 1 spring

  • Small onion(sliced) - 2 cloves

  • Mustard seeds - quarter teaspoon

  • Red chilly - 2

How to make


Step 1:Wash Chakkakuru and Prawn thoroughly.
Step 2:Grind the ingredients like green chilly,coconut and small onion. Also add salt,turmeric powder and curry leaves into it.
Step 3:Put Chakkakuru,Prawn and grinded items in another heated pan and pour water to it and stir well.
Step 4:Cover the pan for ten minutes at low flame till it becomes dry and keep it aside.
Step 5:Heat the coconut oil in a large pan, then add mustard seeds into it.
Step 6:When seeds crackle,add sliced small onions,red chilly and curry leaves into it. Stir well till it becomes light brown color.
Step 7:For Garnishing,mix it with above cooked thoran. Here we prepare delicious and healthy Kerala dish,Chakkakuru Prawn Thoran.
Tips
  • Dish is also tasty when cooked with unripe,sour mango.

  • Before washing the prawn ,heat the prawn in a large pan at low flame and stir it well for 5 minutes,so that it becomes more tasty.

  • Chakakuru should be cut into thin pieces vertically.

2)Ingredients for making Chakkakuru Mezhukkupuratti/Jackfruit Seed Stir Fry


  • Chakkakuru-500 gm

  • Garlic-4 cloves

  • Coriander powder-quarter teaspoon

  • Pepper powder-quarter teaspoon

  • Chilly powder-one and half teaspoon

  • Turmeric powder -quarter teaspoon

  • Garam masala-1 teaspoon

  • Water-half cup

  • Coconut oil-4 table spoon

  • Salt -to taste

    How to make


    Step 1:Wash and cut the Chakkakuru into medium size pieces vertically.
    Step 2:Heat a large pan and add the sliced Chakkakuru ,turmeric powder,coriander powder, pepper powder,chilly powder,garam masala, chopped gaarlic and salt into it.
    Step 3:Also pour water into the pan and stir well.Cover the pan for 10 minutes so that the water completely evaporates.
    Step 4:Heat coconut oil in a pan for 1 minute then put the above cooked Chakkakuru into it.
    Step 5:Stir continuously till it becomes light brown color.
    Step 6:The tasty and delicious Chakkakuru Mezhukkupuratti/Jackfruit Seed Stir Fry is ready.
    Tips
    • Chakkakuru should not be cut into thin pieces.

    • Before washing,the outer skin of the chaka kuru must be removed.


    3)Ingredients for making Chakkakuru Masala Curry


    • Chakkakuru-500 gm

    • Garlic-2 cloves

    • Turmeric powder-2 teaspoon

    • Coconut chips-half cup

    • Coriander powder-3 teaspoon

    • Chilly powder-2 teaspoon

    • Garam masala-1 table spoon

    • Salt-to taste

    • Water-2 cup


    Tempering
    • Coconut oil - 2 teaspoon

    • Curry leaves - 1 spring

    • Small onion(sliced) - 2 cloves

    • Mustard seeds - quarter table spoon

    How to make


    Step 1:Heat the coconut oil in a large pan, then add mustard seeds into it.
    Step 2:When seeds crackle,add sliced small onions and curry leaves into it. Stir well till it becomes light brown color
    Step 3:Add chilly powder,coriander powder to it and stir well for one minute.
    Step 4:Pour water into it and then add Turmeric powder,garam masala,chakkakuru,salt to it.
    Step 5:Cook the dish for fifteen minutes.
    Step 6:Serve it with the steamed rice and garnished with coriander spring.
    Tips
    • To avoid gastric problems,garlic must be used.

    • Chakkakuru should be cut into 4 pieces horizontally and vertically.
