Prawns Roast

Prawns Roast - Kerala Style


Ingredients
Prawns - 1/2 kg
Small Onion - 200 gms - Peeled and sliced
Red Chilly Powder - 2 tbsp
Coriander Powder - 1 tbsp
Turmeric Powder - a pinch
Coconut Oil - 4 Tbsp
Salt to taste

Procedure
Heat Coconut Oil in a Pan
Put the small onions and fry till its tender
Put the cleaned prawns and stir for a few minutes.
You will see the prawns becomes little hard and crawled.
Cook without lid for about 5-8 minutes stirring occasionally.
Put Turmeric Powder, Red Chilly Powder and Coriander Powder
Mix well all the ingredients
Cover and cook until the prawns are cooked well. However, Make sure to open the lid and stir at an interval of 3-5 minutes.
When the prawns is cooked three fourth, add salt to taste
Cook until all the ingredients are roasted well and have a dark brown tint.
Total Cooking time: 30-40 minutes


Few Tips
Use a vessel with thick bottom
Choose comparatively small prawns. Though it is hard to get it cleaned, it is tasty
While cleaning the prawns, use some vinegar
If required, prawns can be marinated with little salt, chilly powder for about 15 minutes (Not mandatory)
Microwave the prawns for 5 minutes at medium temperature before cooking so that the cooking time in gas can be reduced.
