Chicken Roast in Kerala Style

You can never find an easier and quick way to make tasty chicken roast. Just 3 steps are needed to make this scrumptious recipe. A very useful recipe for working women who have to finish cooking in a jiffy!


1 kg chicken (cut into small pieces)
250g small onions
1 inch ginger (sliced long, thinly)
6 green chilies
A sprig of curry leaves
1 tomato (sliced to medium sized pieces)
Coconut - cut into small pieces
1 cup coconut milk (you can use either fresh coconut milk or coconut milk powder)
A pinch of turmeric powder
Kashmiri chilli powder to taste
Salt to taste
4 tsps coconut oil


In a saucepan, put all the ingredients and keep on stove to cook. When it starts boiling, mix it well and cover it with lid. Let it cook for 15-20 minutes, then remove the lid and dry roast it well.
