Here is a Delicious method of making Vazhuthananga / Egg plant Fry

Vazhuthananga / Eggplant - 10 pieces
Chilly powder - 1/2 tsp
Turmeric powder - 1/4 tsp
Garlic - 2-3 cloves
Chick pea flour - 1/2 cup
Coriander Powder - 1/2 tsp
Cummin Powder - 1/2 tsp
Raw mango powder - 1 tsp
Black Salt - 1/2 tsp
Walnuts Crushed - 1/2 cup
Jaggery) - 1-2 tsp
Lemon - 1/2
Water - Required Amount
Oil - Required Amount

Preparation Method of Vazhuthananga Fry / Egg plant fry Recipe :

1)Make holes on the top of the brinjal pieces

2)Mix chilly powder, turmeric powder, garlic, chick pea flour, coriander powder, cumin powder, amchur, walnuts, brown sugar, lemon and water. Make all this ingredients like a paste.

3)Fill the hole of brinjal pieces with the mix ( As said in step 2).

4)Put some oil on a hot pan.

6)Place brinjal on the pan

7)Cover it and fry on low heat for 15 - 30 minutes.

8)upon completion make it drain. and Serve .
